Configuring servers requires books + hands on. You can also learn by installing and configuring services such as FTP, file server, mail server, and etc on your own computer.
When you face any problems in configurations, most of the time Google can give you an answer.

Try practicing in VirtualBox or vmWare.
Or get some heavy CBT videos from torrents.
This is a fact that most of the hacking incidents around the world are caused due to misconfiguration of servers. Need to be careful if you are configuring someone else's server.

I know from setting up my desktop to do so, a home server is pretty easy in Ubuntu 8.10. It's basically patch to the most recent update and install/ configure Samba.
If you're looking for webhost servers or something of the like, I wouldn't have as much of a clue, but as the gents say, the Google helps. Sometimes even the Yahoo.

Some books :
The Ultimate Windows Server 2003 System Administrator's Guide.chm
OReilly Learning Windows Server 2003.chm
Microsoft Windows Server 2003 for Dummies.pdf
Windows Server 2003 Weekend Crash Course.pdf
All these books contain step by step info on how to configure various services.
