AoA Audio Extractor does a good job converting common video file formats to audio.
More info here: http://www.aoamedia.com/audioextractor.htm
I've not used this as much as I did in the past since I have no use for it at the moment.
**One thing to take note of is the nagging popup [it asks you to choose which 'version' to use (Free/Platinum)] every time it is launched. The free is good enough as is.

Personally when im on Windows i use YoutubeFisher which is lite, fast and open source.
YoutubeFisher is a stand-alone application that allows to download media
(video and/or audio) directly from youtube.
YoutubeFisher isn't a converter:
it only retrieves the video and saves it in the format chooses by user
(full-HD, HD, HQ mp4, flv, mobile 3gp, audio mp3 or aac).
Project page: http://youtubefisher.codeplex.com/
Note: No install needed just run it.

For those who don't want to install a specific software to download YouTube videos...
Here's another alternative:
http://saveyoutube.com/
Does a decent job on that. You'll need Java to use the site.
